Cheesecake Cups Perfect For Hosting!

You blink and we’re already at the last full week of March–tumbling into April. But that only means that we’re in Spring mode! Whether you’re hosting more or looking for a bright dessert to enjoy, I think we have a winner this week with a delectable recipe for lemon & blueberry mascarpone cheesecake cups.
I love finding recipes for smaller sizes of desserts I already enjoy! So rather than making one large cheesecake, you can make individual cups with all your favorite flavors presented in a PERFECT way if you’re hosting.

Lemon & Blueberry Mascarpone Cheesecake Cups
The Cheesecake Filling
Creamy, semisweet, lemony, and just plain delicious–that’s what we’re working with today.
The filling consists of homemade whipped cream, mascarpone, cream cheese, sugar, vanilla bean paste, lemon extract, lemon zest, lemon juice…and yes–a pinch of salt!
This filling requires absolutely no cooking, however, the only time-consuming bit of this would be whipping the cream into stiff peaks if you use a hand mixer, like I do. Count it as your workout and you’ll be a-okay ;).
What I do want to mention about this filling is that it is not extremely sweet. Franky the sugar-vanilla-lemon combo is a nice touch that whispers against the cream mixture. But wait–this isn’t a bad thing. Because these cheesecake cups include preserves AND graham crackers, the sweetness factor will be handled. Don’t worry about that.
And to restate it…this won’t take you more than 20 minutes to prepare, even if you’re using a hand mixer. This is one of those desserts that you can prepare ahead of time without breaking a sweat. Great to prepare the night before an event, or if you’re trying to plan around a busy day of cooking.
Gluten-Free Graham Crackers
While you can use any graham crackers, there are some brands I’d recommend to keep this dessert gluten-free. For this recipe, I used Partake Foods brand of Classic Grahams. These are perfect for s’mores or in this case…crumbling delightfully to form a graham cracker crust for the bottom of your cheesecake cups!

Does It Have To Be Blueberry Preserves?
For the sake of the recipe…yes. You can always take this recipe and adjust it later to include a different flavor combination. Isn’t that the beauty of cooking? Finding something you like and adapting it to your tastebuds!
I urge you to stick to this recipe if you’re making it for the first time. Lemon and blueberry is such a top-tier flavor combination!
