Korean Short Ribs – The Perfect Reward After a Busy Day!

The sun is finally starting to stick around here in Chicago, which brings us into Spring cleaning mode! What better way is there to limit the amount of time you spend in the kitchen than by utilizing the amazing slow cooker? Seriously. With us running around and trying to get things done around the house, today’s recipe for slow cooker Korean Short Ribs was absolutely perfect. Not only is it easy to put together, but it is absolutely DELICIOUS!

Prepping Your Korean Short Ribs
One of my favorite parts of using a slow cooker is that you can dump some ingredients into the pot and you don’t have to worry about it for a few hours. This recipe is almost the same. Only a few steps in the kitchen and you’re free to do what you need! Friendly note–when buying your beef short ribs, try to get ones with a good amount of meat on them. If they’re marbled with more fat then meat, then you won’t be left with much once the cook is done.
This recipe calls for broiling the short ribs in the oven on each side and covering in a deliciously aromatic puree of pear, ginger, garlic, coconut aminos, fish sauce, scallions, and vinegar. Let me just say that the sweetness that comes from the pear absolutely makes a difference. Holy smokes–it’s delicious!
Once the short ribs are broiled and the puree is made, everything goes into the slow cooker and is topped off with some chicken broth. Seriously, that’s it. Then you let these beauties cook for 9-11 hours (for 6 lb of short ribs) Keep in mind that if you use less short ribs, then your cooking time will vary. I would start checking in around 5-6 hours. We had 4 lbs of beef short ribs and the total cooking time was around 8 hours. By that point the meat was falling off the bone, which is exactly what you want!
If you end up using the full 6 lbs of short ribs, then you will likely be letting them cook closer the 11 hours mentioned in the recipe.
What To Serve With Your Korean Short Ribs?
Obviously, the Korean short ribs will be the star of your dinner, but what do you serve to complement something so delicious? My Dad actually tried this recipe on the same day that I did, so I have two different options to recommend!
My Dad ended up serving his dish with baked sweet potatoes spiced with ground ginger, and roasted broccoli. I ended up making some rice and Korean-style bok choy! Another recipe I highly recommend when looking to make something with delicious Korean spices!
I think adding a little bit of spice as a side is a delicious touch. Adding kimchi into the mix would also work quite well!

This recipe was just what I was looking for in a slow cooker dish. Nom Nom Paleo provides excellent instructions and ingredients to result in a fantastic dinner (that will likely yield leftovers too 😉 ). The instructions are very clear and easy to follow. The ingredients are nothing out of the ordinary, so you shouldn’t have to to out of your way to find them.
This meal comes together over the course of 8-11 hours, depending on how much beef short ribs you have, so you’re free to take care of errands or get some work done, or simply relax and wait as your slow cooker prepares a fantastic meal for your dinner.
Needless to say, this recipe gets a full 5/5 from me. It’s easy, delicious, and certainly fit for a dinner party, too! If you’re looking for a new recipe to try and you’re running low on time, then this recipe for Korean Short Ribs, my friends, is highly recommended by me.
