If you’re looking to bring a Korean-Inspired experience into your kitchen, then this week’s review will be one of your favorites! Lately I’ve been on the search for Korean flavors to add to my cooking because I finally secured gluten-free versions of some of the most important flavors in Korean cooking. Or at least, I think they are, given how often they are used 😉
For proper terminology, this dish is also called Bossam.

Korean Pork Belly That Just Melts In Your Mouth
The last time that I worked with pork belly, I ended up baking it until it was cooked through, sliced, and pan-fried for ramen. This time we’re boiling the pork belly in a mixture of spices, fruit, and other deliciousness. Pork belly can be chewy in texture and that is certainly not how we want it for this recipe. Believe me, if you follow the directions of this recipe, you will be left with tender pork that will work so wonderfully in these lettuce wraps.
Now, pork belly does have that layer of fat on it–if you want to keep it on the leaner side, then do trim it off. If you like a little bit of fat, then I can tell you that it will melt in your mouth.
As for the flavor? The pork is infused with all the ingredients that it cooked in, however, I can tell you that the flavor is not over the top. It does have a nice essence, but remember it’s not quite like a marinade.
What you pair the pork with next will only build up the flavor.
How To Build Your Bossam
The best part of this dish is that you can build up the flavor with each side that you have. My Korean Kitchen shares many of their recommendations and authentic additions. If you do not have all of the ingredients or may not like too much spice–worry not. I ended up adjusting a few of the additions on my table, and we enjoyed every bite of it.

For my lettuce wraps, I used the following:
- Vegan Kimchi
- Sliced Jalapeno
- Dipping Sauce (soy sauce, Doenjang, gochujang, and a little bit of gochugaru)
However you decide to dress up your lettuce wraps, I can guarantee that you will love the flavors. Delicious tender pork combined with a medley of sweetness and spice? You seriously don’t want to miss out on this one.

As someone who is taking the time to explore the Korean kitchen, I absolutely loved this recipe. Yes, the recipe was simple to follow, but it was the guidance with flavor that is deeply appreciated by me. I’ve tried many “inspired” recipes, but hearing someone bring in their family flavors into a recipe that they share with the world? That’s just delightful!
