I think one of the things that we can agree on is that bone-in, skin-on chicken thighs are delicious. My favorite go-to dinner on a busy night would be skin-on chicken thighs with some yummy roasted potatoes. Now, for this week’s recipe, I wanted to try something different. Just like everyone else, I find myself wanting to be inspired by what I find online. After a while, it all seems to look the same until you manage to find that something–that recipe that stands out.
Voila! That’s how I ended up with today’s recipe review for Greek chicken thighs!

This recipe really caught my eye because it was so visually appealing to start. I mean, do you not salivate at the sight of a beautifully colored chicken thigh? 😉
Okay, okay–let’s go over why this recipe is one you should totally keep in mind for when you’re in a weekday rut!
Prep Ahead Of Time And Dinner is a Breeze! But What If You Can’t?
This is one of those dinners that does require a tiny bit of prep. Now, don’t let that deter you, because it honestly just means throwing in the majority of the ingredients in a bowl (or ziplock bag) along with the chicken thighs. The magic flavor bomb happens when you let the chicken chill in the marinade. The recipe does state that that the chicken should be in the marinade for one hour or up to 24 hours.
For my dinner, I kept the chicken in the marinade for just a little over an hour. It was honestly one of those crazy days where I couldn’t prep ahead of time. I couldn’t exactly pick something else off my list to make because I only had the chicken defrosted at that moment. Regardless, I followed the recipe and allowed the chicken as much marinading time as I could with my schedule.
Spoiler alert: the chicken was still delicious.
Now, it’s a no-brainer. If you let the chicken marinade for over a few hours, then the ingredients would certainly penetrate the chicken a lot more. Again–if you only have that one hour at most, then you’re still going to have a delicious dinner.
Big note here, and I mentioned it before, do keep the same chicken as mentioned in the recipe: chicken thighs with the skin on and bone in. You get that beautiful golden crispy skin, and the meat is so incredibly juicy. Skinless chicken thighs would be alright, but I think the big oomph with this flavor does come from the skin-on chicken thighs.
What To Serve With Greek Chicken Thighs?
Lite Cravings does a great job of inspiring a delicious plate for their recipe for Greek Chicken Thighs. You can plate your dinner up with the chicken and perhaps some rice and a light salad. I did go a different route and made some roasted potatoes with a very simple cucumber and tomato salad.
To make my potatoes have that Greek-inspired zing, I did sprinkle some additional feta cheese and parsley, then topped it off with a quick squeeze of lemon juice.
Super simple and super tasty!
Honestly, you could keep it super simple and just plate up the chicken with some veggies. It’s all up to you!

It doesn’t matter what time of year, the crazy weeknights can come out of nowhere. It certainly does help having some recipes under your belt that you know are going to be tasty. This recipe for Greek Chicken Thighs is certainly one those recipes now. It does help switch things up in my household too!
Despite having a wild day trying to get this dinner on the table AND the pictures for the review, it came together very quickly. I think the best part of this (aside from the flavor) would have to be that you don’t have to prep the chicken in the marinade the night before. Sure, it’s an option, but it’s not the deciding factor on whether or not your dish will taste “right”.
I think that’s what we’re always after, right? We don’t want hard set directions that keep our dinner from being delicious and comforting.
