GreyEyes Cooks: Asparagus, Sundried Tomato, and Chicken Spaghetti

Hello once again, everyone! I am back with another review of what I ended up making for dinner over the weekend, which of course, follows a simple criteria I try to stick with:

  • Quick
  • Easy
  • Hella Tasty

I’ll be honest–I’m not a HUGE fan of pasta in general, but I’m always willing to try something new. I had some help with picking what to make this weekend. Asked my boyfriend what he was in the mood for and his response was, “Maybe pasta? Chicken?” That’s all I needed. I started trying to narrow it down based off what would be quick to throw together. First instinct was to look for casseroles, because generally you can throw it all together and stick it in the oven. Well, none looked as appealing as this spaghetti recipe.

Let’s get to it.

Delish has a great way of just getting to the point with the instructions. This recipe was super simple to follow and definitely did not take long to make. What took the longest was just cooking the chicken and getting the pasta ready. Also…I am waiting for the day I become a pro at cooking chicken. That’s the one protein I am terrified of even under-cooking by a second. Last thing I want is to poison those I’m feeding! Luckily, this cooked well and wasn’t dry. That’s a success in my eyes!

Anywho, once the chicken and the pasta were good to go, all I needed to do was get the remaining mix together. Pictured above, I had the asparagus, sundried tomatoes, and garlic simmering with a combination of heavy cream and chicken broth. Usually you’d expect some cheese to be added to make it extra creamy, but this was perfect. It was creamy, but not so heavy that you need to take a long nap after eating, haha! It definitely gets a thumbs up from me!

Like I said–this recipe gets a thumbs up from me. My boyfriend can confirm it was indeed tasty, so make that two thumbs up! 🙂
It was simple, inexpensive, and very tasty. On a Saturday evening, that’s all I wanted to deal with. As much as I love to cook, I like to spend my time catching up and enjoying a good movie rather than talking over pots and pans in the kitchen.

This recipe is one I wanted to try out, but I can definitely see myself making it again. The portion can definitely feed 3 hungry people, so it’s perfect for a family meal on a busy weekday! I’ll definitely stand by my rating of a solid 5/5!
