I don’t know about you, but any time February rolls along, I have a desire to preheat my oven and take another stab at baking. This weekend was no exception, which is how I came across a recipe for gluten-free mini cheesecakes!

Cheesecakes are certainly simple when reading the instructions, but they do take some extra steps to turn out just right.

Don’t Cheesecakes Usually Require Graham Crackers?

Yes, of course! Sure you can make a cheesecake without a crust, but where’s the fun in that? There are multiple brands of gluten-free graham crackers out there. If you’re not sure where to look, the recipe does provide a recommendation. As for my recommendation? I found mine at Whole Foods.

Pamela’s Brand worked perfectly for this crust. It was just sweet and spiced enough for the crust to these delightful mini cheesecakes! If you can’t find this brand, then any gluten-free graham cracker will do just fine! Don’t need to keep things gluten-free? Oh, then you know what to do, right? 😉

Baking The Mini Cheesecakes

I have never made mini cheesecakes like this, so I followed the recipe instructions exactly as they were written. I even pulled out my food processor for this! Granted, it’s not necessary, but it really does speed up the process. Now, what I’d really like to talk about is the actual baking of the mini cheesecakes. Once everything is combined and ready for assembly, you can fill cupcake liners with the crust and the cheesecake filling that is poured to the top.

This filling will absolutely puff up, but in my experience it does not overflow.

As mentioned, I’ve never baked cheesecakes like this and I followed every step of the recipe without straying. When it comes to baking, sometimes the recipe is not enough to result in a perfect bake. Honestly. that’s one of the reasons why I prefer cooking to baking. This bake, however, turned out quite good–aside from the sunken result.

Cheesecakes do have a tendency to sink, which is indicated in this recipe too, but I would have preferred some instructions or at least attention to how to prevent that much sinking. My mini cheesecakes were baked for the needed 20 minutes and rotated once for some additional time to just begin to brown on top. The beauty of an oven that doesn’t heat evenly, right?

After doing some digging online, I did find that there are a few steps to prevent the sinking, such as turning off the oven once the cheesecakes are baked and leaving them in until the temperature comes down gradually. I feel that the temperature shock causes deeper sinking? Honestly, this will take some more experimenting on my side.

Do these still turn out? Are they still tasty? Yes.

Can their little craters be used for delightful pockets to be filled with fruit? 100%

As someone who does not often bake, if at all, this recipe was very simple to put together. These mini gluten free cheesecakes taste fantastic! They have just the right amount of sweetness and pair so nicely with fresh fruit. Honestly, they would pair well with just about any topping. Treat it like any other cheesecakes and you can make an activity out of it. Oooh! These would be so nice for like a cheesecake bar! Set out some different toppings, sauces, and you’re in for a good time! Perfect for people of all ages!

Normally, I would dock some points for the bake not holding up very well, but that is sometimes the nature of baking cheesecakes–unless you follow the needed steps to keep that from happening.

Would this be better if the cheesecakes didn’t sink? They would look prettier, sure, but the flavor honestly wouldn’t change that much.

Regardless, I think the this recipe is absolutely worth the try. It’s simple, tasty, and can be customized in so many ways to please everyones tastes.
