Whether you celebrate or not, I think we can agree that the Spring color scheme is just so inviting! I absolutely pastels! When I saw this weeks recipe for a Blackberry Cream Pie, I just thought it would be perfect for the entire vibe of Spring!

So, if you’re looking for a last-minute Easter dessert or simply something to brighten up your home and tastebuds, you’ll love this weeks recipe! Let me just comment that I ended up testing this recipe on my lunch break. This pie was prepped and in the freezer in 40 min. Yes–that included loading dishes into the dishwasher and cleaning up my work station. That’s a record-time dessert in this house!

Making The Graham Cracker Crust Gluten-Free

This one is pretty self-explanatory, because only one ingredient needs to be changed. Yes–we’re talking about the graham crackers. Luckily, there are gluten-free graham crackers out there! Whole Foods carries Pamela’s Honey Graham Crackers. If you’re a Thrive Market member (which I’ll be talking about in the future 😉 ), then this brand is also available for purchase.

Making this change in the crust is the main way to make this pie gluten-free.

But let’s comment on the flavor. I followed the crust recipe provided by Bake It With Love. Very simple. Graham crackers, sugar, and butter. On top of the sweetness from the crackers, I feel that the sugar could be cut back a little bit, but then again, I usually don’t make sweets. I would taste it along the way. Start with one tablespoon of sugar as your turn the mixture into the perfect consistency for the crust.

Whether you add all the sugar or less, this crust is perfect to have in contrast to the blackberry cream.

BlackBerry Cream Pie Filling–Yum!

I absolutely love blackberries, so when I saw that this recipe called for homemade blackberry syrup, I was super excited! Making the syrup is simple and doesn’t take long at all. You can absolutely make multiple parts of this filling at the same time. Talk about making good use of time!

The most important part of the filling would have to be the whipped cream when it is being incorporated into the blackberry syrup and condensed milk mixture. Very important that you carefully fold in the whipped cream as to not beat much air out of it.

Chilling Instructions For the Blackberry Cream Pie

My main comment on the setting time for this pie would that it definitely took more than 4 hours for the cream to set enough to be cut. My finished pie was in the freezer for 5 hours before I took it out to take pictures. When I cut a slice of it, it was not set properly. However, after keeping it in the freezer overnight, it cut much better and it kept its shape.

My husband got a taste after it had set in the freezer overnight and liked it so much the he asked for me to make it again 🙂 Bake it With Love, you’ve shared a delicious recipe that I will certainly be making again.

This recipe for Blackberry Cream Pie is so unbelievably easy to make and it tastes delicious! So, why knock it down to 4.5? My only note would have to be on time needed to have the pie set properly. I think 4 hours is good enough time if you still want the pie to ooze like a traditional cream pie. I preferred to have mine more set, so leaving it in the freezer made the most sense. The cream is delicious, the crust is sweet, and the color just brings a smile to your face!

Overall, this is an excellent recipe that comes together in under an hour. It’s perfect if you want a no-bake dessert, too.

I also love that I was able to make this gluten-free without any issue. That was a major bonus for me.

Will I make this again? Most likely. If my husband says he likes something so much that I should make it again, then I think that counts as a winner.
