Tomato Coconut Curry–In 15 Min.

So, hello friends! I hope you’re all doing well as you’re preparing for the holidays! This past week I’ve been away from home to do some dog-sitting. Two wonderful shar-peis–a breed I am very familiar with. But while staying there, I wanted to still be able to cook. That’s how I got to browsing some Youtube channels for ideas for quick dinners.

For some time, I’ve been subscribed to Pro Home Cooks, who posts some excellent videos around home cooking. Recently I watched his video on 15 minute dinner ideas. Intrigued? Check it out right -> here!

The idea that sparked the most interest for me was the curry dish. But did it actually take 15 minutes? I had to try. Well, you see all of these recipes claiming that they take 30 minutes or less and sometimes take more than an hour. So when I see and hear someone throw together a dinner in under 30 minutes, I am intrigued.

Pantry-Friendly Ingredients

The best part of a recipe like this is that you may already have many of these ingredients already hanging out in your pantry. The recipe in the video doesn’t provided actual measurements, but by watching, you can determine an approximate amount of each ingredient. For my take on this, I used the following:

  • 2 knobs of ginger, peeled and chopped
  • 1 red chili (they used two, but I settled for just the one)
  • 2 heirloom tomatoes
  • approx. 1-2 TBS curry powder
  • 1 can coconut milk
  • half a bag of frozen chopped spinach
  • Fresh asparagus
  • Salt & pepper to taste

If you’re really particular about the steps, just follow along with the video and you’ll absolutely be fine. He goes over each step without rushing too much. I think that’s what really kept me interested. Also, another reason why I’ve been enjoying that channel lately. Honestly, I eye-balled it, and ended up adding a little bit more towards the end. Ended up great!

It Actually Comes Together Quickly

Not going to lie here. This curry dish came together just as quickly as it did on the video. There’s so little prep work involved that majority of the time is just active cooking. This absolutely is a great option for a quick veggie weeknight dinner. It’s comforting, filling, and definitely one that I would like to repeat when I’m in a bind for a recipe idea.

Now, he does make a good point that this can be served rice naan bread, rice, or whatever you’d really like. Cooking rice absolutely takes more than 15 minutes on its own, but if you’d really like to save all the time–there’s nothing wrong with picking up a pack of frozen basmati rice. There really isn’t. I like to keep some frozen cauliflower rice, white and brown rice on hand for busy weeknights.

So while he says making rice in 15 minutes is not possible, there’s that little life hack for you, haha!

I absolutely enjoyed this very quick and easy curry dish. I was able to put this together in 15 minutes as demonstrated, which definitely made me happy. Having a dish like this in my mental recipe book makes it so great for those busy nights or nights when you only have a few things left in your fridge. Rather than order takeout, keep recipes like this handy to be the dinnertime savior in your household!
