‘Tis The Season For…BUTTERNUT SQUASH!
If you haven’t grown tired of butternut squash yet, or if you’re looking for just the right recipe to try before Fall is over, then you MUST keep reading.
Okay, do I still have your attention? Excellent. I feel like we’ve consumed so much butternut squash this season simply because I’ve been finding so many yummy recipes using this delightful seasonal squash. The most popular way of preparing this squash, as I’ve seen, is by roasting it. You can pair it with protein, or use it in a salad.

Salads Don’t Need To Be Light And Wimpy!
I think we’re past the point of thinking salads are but a wimpy side dish, right? This salad gave me that impression for about a minute, until I actually made it. Butternut squash is so filling on its own, so needless to say you won’t really need to have anything else to pair it with. If you’re planning on making this for a gathering, then I would recommend treating this as a side dish. But if it’s just 2 people? This will be comfortably filling.
This salad pairs a lot of strong flavors with each added ingredient. Nothing overpowers the other, but nicely builds up to deliciousness in every bite.
Don’t Forget To Work That Kale…
One of my favorite parts about working with kale is that there often isn’t too much seasoning required for the actual greens, because kale has that peppery bite to it. While it is flavorful, it is also a bit more tough in comparison to spring greens or spinach. One of my best recommendations for making a salad using kale (not baby kale) is to pour a little bit of the prepared dressing over the kale before other ingredients are added.
Toss the kale with the dressing (we’re talking about 1-2 Tablespoons at most) in order to lightly coat the greens. Massaging this into the kale will allow for it to soften up just a bit so biting into it while eating the salad won’t be so tough.
If you decide to use baby kale, then you won’t have to consider this step. We don’t like soggy salads here!
We Need To Mention The Pomegranate Too!
If you’re not a fan of adding fruit into your savory salads, then I think you should reconsider for the sake of this recipe. Pomegranate is such a delightful fruit that often requires you to wear an old shirt just to eat it. Yes, I had some flashbacks to my younger years of my mom sitting me down with half a pomegranate and a spoon. Good times.
But in the case of this salad, it adds such a delightful pop of flavor when you bite into it. Plus, the color? I mean–come on! Serving this to family is sure to bring a smile to their face.
As an added bonus, you get to enjoy the remaining pomegranate that remains from this recipe. Don’t sleep on the health benefits of this beautiful fruit!

If the above didn’t clue you in–this recipe is a MUST to make if you’re looking for a refreshing salad that is also comfortably filling. Treat it as a main dish for two, or a side dish for larger family or gathering. I truly don’t think you could go wrong with the flavors in this salad. You’re getting beautiful Fall flavors in this salad as well as a nice visual from all the colors. The greens, the reds, and the butternut orange! Honestly, taking these pictures just made me so happy. No filter, everyone! Seriously! The colors are legitimately that appetizing!
Now that I have you thinking about adding a salad into your weekly menu, I highly recommend that you give this one a try. Just because we’re approaching colder days (at least here in the Midwest), doesn’t mean we just have to stick to stews, casseroles, and comfort food! Jazz up your plate with seasonal squash in a yummy salad!
