An Udon Stir Fry To Close Out 2020
Hello everyone! I hope that you all had a wonderful holiday. I know that this year the holidays look a little bit different. Many of our traditions had to be altered a bit, but what’s important is that we continue to stay safe so we can get back to our normal.
Now that we’re racing towards the last week of this whirlwind of a year, I wanted to take the time to appreciate all the good that has come from this year. I find that focusing on these moments has brought me more peace than feeling sad about all the things that were missed. I feel I’ll be taking this mentality into 2021.
With all this gratitude, I’d like to thank you all for checking out my reviews! This will mark my 41st post this year which ended up being lot better than I thought despite the circumstances of big life events and the overall lingering stress of 2020. But–thank you. 2021 is around the corner and I am so incredibly excited to continue working to bring you delicious recipe reviews and new and exciting subscription boxes to try.
Now for the real star of this post…a deliciously simple Chicken Udon Stir Fry.

Choosing The Right Noodle
This stir fry is best made with fresh udon noodles rather than dry, which is the kind that I had access to this weekend. However, if you have the choice, always go with fresh. You’ll definitely taste the difference in the texture.
If you are looking to use fresh noodles, you have a few options. Make them from scratch or check out your local Asian grocer. They will likely have fresh noodles in the refrigerated section.

Regardless if you use a dry noodle or fresh, this recipe tastes fantastic.
One note I’d like to make on my attempt at this, is the color difference on the noodle. I’d like to retry this recipe with fresh noodles. The sauce should coat in better and the noodle shouldn’t stick to the bottom of the pan!
Balanced Flavor = This Stir Fry
This year I ended up making a ton of different stir fries, but they were all over the board. I used different proteins, different veggies, and different sauces. One of the biggest issues I’ve had with other stir fries is the saltiness of the sauce. This chicken udon stir fry is absolutely delightful because you get such a great mix of flavor. A very subtle sweet, a little saltiness from the oyster sauce and the soy sauce–delicious!
Here’s why:
The sauce is used to marinate the protein, in this case, the chicken. The sauce that coats the majority of the noodles is dark soy sauce.
What I found most common in different recipes is that the bulk of the sauce is added at the very end. Meaning that all that saltiness clings to the noodles and not as much to the protein.
This is the recipe that I am adding to my favorites for that reason. Change up the veggies, mix up the proteins, the sauce will work like a charm. I am so thrilled.

It’s just so well-balanced.
