In my continued search for recipes to make during the summer, I came across this one for a grilled salmon salad with an avocado-cucumber salsa. It’s light, and fresh, and combines flavors that work very well together. Also, it’s very simple to make, so if you’re new to cooking or nervous to try something new…this one will work out.

Before we get going, I want to point out that this recipe is for grilled salmon. Worry not if you do not have a grill, or grill pan, or don’t like grilled fish. You can absolutely pan-fry this salmon or even bake it if you’d like. For my review today, I ended up pan-frying my salmon, so there ya go 😉

Making The Salmon Salad

This is definitely a salad that you can prep and set aside. I prepped the salmon by seasoning it–set it aside. I prepped the romaine for the salad–set it aside. Made both the dressing for the salad and avocado cucumber salsa, and you guessed it–set it aside.

I would say that the setting aside is all within a reasonable time frame. Meaning, I just did all of it at the start, so then I could focus on getting everything put together without feeling all over the place. I wouldn’t do this at the start of the day or the previous night–just to make that clear.

The dressing is actually really tasty. It’s Greek yogurt based, so it has a tartness to it without it being very heavy. The fresh cilantro and lime juice really do help brighten it up and dilute it a bit. Once added to the romaine, it coats the greens very nicely.

The salsa also has those fresh herbs and assorted greens (avocado, cucumber, jalapeño) that brighten up the entire dish. It’s the freshness that really works so well for this salsa. The nice crisp crunch of the cucumber combined with bits of spice and creaminess from the jalapeño and avocado makes for an awesome salsa that can be enjoyed with this dish or individually!

To be honest, I thought that all of this would taste pretty bland. Boy was I wrong 🙂

Grilling The Salmon Vs Pan Frying

Just because I decided to pan-fry my salmon does not mean I am advising against grilling. That’s not it at all. We just have a charcoal grill, which takes a little bit of time to fire up and get up to temperature. For just one piece of salmon? During the week? It wasn’t worth it for me. Now–if you have a propane grill? Rock on. Or better yet–if you have more items to grill maybe for meal prep, then the charcoal grill is a-okay.

If you’re not grilling and decided to pan-fry, then I can tell that you’d be missing a little bit of that nice char that you’d get from grilling or even that smokiness. Luckily, the seasoning on the salmon is really nice, which complements the salmon salad wonderfully. So whichever method you use to cook the salmon, you’ll still be left with a tasty result.

So the main point here is…whether you’re grilling on pan-frying, your salmon has the potential to turn out delicious.

No grill? No problem ;).

A salmon salad is just about the best thing I could imagine for a nice summer weeknight. The fish is well-seasoned. The romaine is nice and crispy even after being coated in the Greek Yogurt dressing, and the salsa on top is just delicious. Have some leftover? Bring out the tortilla chips! Seriously!

But in all seriousness, this recipe is very easy to follow. It’s balanced in terms of flavor, but as always, do taste along the way to make sure you don’t need to add more salt or pepper. You know, the usual!

This recipe stands out a bit more against “regular” salads. It has a little bit of that extra pizzazz that makes it special without it taking more time to prepare than you’d expect.
