GreyEyes Cooks: Peanut Butter Blossoms

Hello again, friends!

I don’t know about you guys, but when it’s gloomy–like it has been this past weekend with all this rain–I can always use a sweet treat to brighten my mood. And as an added bonus–brighten the mood of others.

Unsure of what to make, I went off of my coworkers recommendation for peanut butter blossoms. I sure don’t regret it. The recipe was super quick and very easy to follow. Now, you should know by now that I always look for recipes that follow that criteria. Oh–also…it must be tasty!

As stated earlier, the recipe came together VERY quickly, even though I didn’t have hand mixer. I just used a whisk and (mainly) a fork! Turned out just fine. I cook at my boyfriends condo on the weekends, so my resources are a little limited, but as you can see, I manage just fine.

It came together in just under an hour, which was perfect! The cook time was VERY accurate, however I will make a note that they should only be baked on the top rack in your oven. My second tray has bottoms that were a little darker, but luckily not burnt! So, if you had to have multiple trays, consider having to similar sized trays, or bake in two rounds.

I’ve read many recipes for cookies like this, but this one really takes the prize. From bowl to tray, the cookies are ready to go quickly and bake even quicker. Whether you’re baking just to have a sweet treat around the house, or if you need something to bring to a potluck–these cookies will definitely be a hit!

These barely lasted through the weekend! SO tasty!

I wish this review was longer, but honestly there are no changes I’d recommend. As someone who has mild freak-outs while baking, these were a BREEZE. I’ll be making them again for sure. In general these cookies are very simple to make–no matter whose recipe you’ll try. But this one gives you the added bonus of no additional wait time with the dough. The dough I ended up with was not hard, but it also wasn’t so mushy that I couldn’t form the needed 1 inch ball.

So, if you’re looking for a very quick and tasty cookie recipe, I’d definitely give this one a shot. It’s a classic and sure to get raving reviews from anyone who tries them!
