Gluten-Free Banana Bread

Can you believe we’re already halfway through January?! I work at an IT company full-time and I handle the scheduling for our engineers, so each time I send our reminders for scheduled visits it blows my mind how quickly time is passing.

Honestly, it’s just as fast as bananas ripening to the perfect stage for banana bread.

Aha–segue! You like that? I thought it was clever 🙂

Yes! Today we’re talking about one of the tastiest and easiest sweet breads you can make that still tastes delicious when made gluten-free!

I normally get bananas at the grocery store for my husband, because I think he just likes them more than I do. Honestly, it’s a consistency thing for me, so once they’re past a certain point of ripeness, I’d rather set myself on fire than eat a mushy banana. So when my husband opened the door to the pantry and saw that the bananas were basically all brown, he looked at me and said “Oh, these are pretty ripe…maybe we can make banana bread from these?”

I had to make a Tiktok about that.



Did my husband actually forget about the bananas, or did he just want me to make banana bread? Anywho, always an opportunity to find a new recipe and get it ready for review!

Banana Bread For A Weekday Treat

Banana bread is just one of those treat that can be made during the week without breaking a sweat. And if you’re like me and don’t bake often–this is basically fool proof. I was able to make this at the start of the week while I was also working on dinner. Can’t beat that!

Everything you need for this recipe would generally be in your pantry without having to make a special treat to the store. And yes, this includes the ripe bananas you’ve been holding onto!

The ingredients are simple and the process of putting it together is simple as well. Honestly, the most time-consuming portion of this prep was creaming the butter and sugar. That’s it. Then you combine the rest of the ingredients, stir in some chocolate chips (not required but recommended), and let it bake for 55-60 minutes. Simple, right?

This banana bread comes together super quickly. The bake itself is pretty straight forward. Like with all baking, make sure you check on your banana bread as your oven may be different. Simply use a toothpick to check in the middle and if it comes out clean, then you’re good to go! I baked mine for a full hour before taking it out of the oven.

VERY important to let this banana bread rest properly. If still warm, you’ll notice some melty chocolate, but don’t be alarmed. After resting for the appropriate time, this banana bread will look divine.

The Banana Bread Taste Test

Well of course making the banana bread is simple and straight forward, but what of the overall flavor?

While I am not overly fond of sweet breads, I do admit that this banana bread is delightful. It’s just the right amount of sweetness from the chocolate and the actual bananas. The banana bread isn’t dense and not overly crumbly like you’d find with most gluten-free desserts. So those who aren’t gluten-free will absolutely enjoy this without going “Oh my god, is this gluten-free?” They will be saying “Oh my god! I can’t believe this banana bread is gluten-free! It’s fabulous!” Yup–just like that.

So if you enjoy a good banana bread, then this recipe will absolutely not steer you wrong.

As a home cook, there is nothing that I hate more than an overcomplicated recipe for a very simple bake. Frankly, baking stresses me out. So this recipe is great. It’s super easy to make as the directions are clear and easy to follow. It’s also quite tasty! It’s not too sweet where it’s overly cakey. It’s just the right amount of sweetness, most of which comes from the very ripe bananas. Frankly, the only reason I wouldn’t give this a full 5/5 is for my own preference. I’d reduce the sugar in this to keep the banana flavor forward. But that’s just a preference :).

Would I use this recipe again to make this banana bread? Of course! Gimme Delicious gives me absolutely no reason to dismiss this recipe. It’s simple, tasty, and very enjoyable when you want a sweet treat during the week.

If you’re looking for a great gluten-free recipe that doesn’t taste “gluten-free”, don’t sleep on this recipe. There is absolutely nothing lacking and I can assure that any banana bread lover will enjoy having a slice of this!
