The Comforts of Spicy Chicken Ramen At Home

Since going gluten-free, it hasn’t always been easy since many ramen shops use ingredients that aren’t gluten-friendly. So, if I’m craving delicious spicy ramen, then I can either do a lot of extra research to find gluten-friendly ramen shops or make it myself!
Now, most ramen broths take a long time to develop all these wonderful layers of flavor, so finding a weeknight recipe that delights the tastebuds is truly a great find! Is it 100% gluten-free as written? No, but I have you covered with my go-to substitutes!

What Gives This Homemade Chicken Ramen The Spice? And How To Make It Gluten-Free
As mentioned, ramen usually takes a long time to make, especially when you aim to achieve that beautiful flavor. This recipe for spicy chicken ramen is actually quick to make, but it still packs a great punch of flavor and spice. For weeknight ramen, it isn’t bad at all!
This ramen broth gets its beautiful red color from one of my favorite ingredients! Kimchi! That lovely spicy and sour flavor really kicks things up a notch. When you look up kimchi, many sources will tell you that it’s gluten-free, however, please note that traditional kimchi is made with fish sauce. Unfortunately, not all fish sauce is gluten-free, so I often use vegan kimchi. My favorite brand found at my local Whole Foods is Mother In Laws Vegan Kimchi. I’ve had many types of kimchi before and this one tastes just as great.
Aside from the color, a lot of the broth’s spice does actually come from the kimchi. The gochujang isn’t extremely spicy, but it does bring out that awesome chili flavor. This would also be yet another ingredient that will need a gluten-free substitute. If you are shopping at Whole Foods, I highly recommend my favorite substitute by Coconut Secret.
The ingredients mentioned above are the two key pieces that give this dish the spice and color that will wow you. Aside from that, you’ll want to use gluten-free soy sauce and gluten-free ramen noodles. My go-to brand has been Lotus Foods.
If we’re talking about the difficulty in making this gluten-free, I’d give this a 2/5. If you cannot find these items at your local grocery store, then there are certainly other sources, like Amazon, or even subscription grocery services like Thrive Market.
Can We Talk About The Chicken For a Moment?
As much as I love the broth in the recipe, I want to spend some time giving the chicken some much-needed attention. The chicken in this ramen recipe cooks in the broth–simmering for around an hour in the delicious spices. By the time that it is cooked–it’s basically falling off the bone. I cannot stress enough how delicious this chicken is once it’s cooked and broiled before serving. This final step gives it a little bit of char that tastes great and looks beautiful in pictures ;).
Can you go without chicken in this recipe? Sure. If you’re vegetarian, then maybe add some more toppings, or even work some tofu in there. If you do eat chicken, then I do highly recommend that you keep it in. It really boosts this recipe up another level.

I give this spicy chicken ramen recipe a firm 5/5 because it is delicious, easy to make, and easy to make GLUTEN-FREE! I love that with the changes I made, the recipe does not lose its intended flavor. Truly. I’ve tasted all of these gluten-containing ingredients before and they’re the same. I promise you that.
If you can eat gluten, then by all means–make the recipe as it is written.
If you like ramen that is on the spicier side, then this one may absolutely be great for you. I love the spice from the kimchi and Korean-inspired food in general, so this was right up my alley.
