Hello again!
As we learn to function in this different kind of normal, I figured I’d let you in on which recipes I’ve been keeping in my go-to pile of recipes during the week.
Even if you may not be going to the office to work, it doesn’t mean you should be standing over hot pots and pans for hours on end. Now, if you’re experimenting in the kitchen, go for it. But what I’m talking about is just your average weeknight meal.

Chicken has been a relatively easy protein to get when ordering groceries, so many of my go-to’s with protein include chicken. Trust me, I do everything I can to add a variety of flavor combinations, which is why I enjoyed this recipe so much!
I will, however, offer you my feedback on what worked and what didn’t based off what I had available.
Shallow Fry That Chicken, Friends!!
I’ll be honest with you, I am rather new to recipes that require frying. Maybe it’s just one of those things that made me nervous to jump into doing, but I’ll say this recipe is stress-free. I promise!
You only require a shallow-fry, so don’t worry about filling a large pot with oil. The chicken in this recipe just needs to have that lovely golden coat before it’s moved to a baking tray. Please note on the recipe: chicken will likely not be cooked all the way through during frying process, and that is okay! That’s what the oven time is for.
I have baked chicken pieces like that before, so I definitely agree that the shallow-fry is necessary. That eggy coating is phenomenal and the chicken is so incredibly tender. Your family will have you thinking you posed take-out as home-cooked. I guarantee it.
Steamed Or Baked Veggies?
Here is where I tell you I’m an amateur home cook. If you don’t have fresh broccoli, steam the frozen kind you have taking up space in your freezer. Do not put in on the baking sheet post steam…it will not only lose that vibrant green but also it will not roast well. You’ll end up with kinda mushy broccoli, which isn’t our favorite. Don’t get me wrong, it’s edible, but it’s just not the same as nice, crisp broccoli.
Of course, if you want to add other vegetables–I say…go for it! Customize it to you and your family’s tastebuds!
Is This Your Weeknight Savior?
I’d say so! If you’re still busy with work and kids, then this is absolutely going to be the time-saving dish of the week! It doesn’t take too long to go from prep to table. Once all the chicken is fried up and on the baking sheet, you’re in the home stretch! I couldn’t have asked for a better recipe to satisfy the craving for delicious takeout.
This is something that is very important to me, because quarantine or not, I certainly enjoy having more time to spend with my loved ones rather than being “stuck” in the kitchen.

This recipe is absolutely simple and delicious. We really enjoyed how quick it was to make, and also how flavorful it was. You can absolutely customize it however you’d like, but if you’re looking for recipe that you can follow blindly–this is it.
So this absolutely gets a solid 5/5. Another recipe to add to your collection!
