One Pan Cooking–Your Kitchen Time-Saver
Over the weekend or during the week, nothing brings a smile to my face more than knowing I can make a delicious meal all in one pan. This recipe for creamy garlic chicken hits the right spot any day of the week. Now, there’s plenty of one pot recipes out there and they are only a search away. What made me want to give this one a try?
Looking for recipes that fit a gluten free lifestyle has been an adventure. I’ll admit that finding these recipes is a lot more easier now than it has been 10 years ago. The internet is such an incredible tool and all these food bloggers are a life saver!
Another reason why I wanted to give this recipe a try is because, typically, when you see a creamy chicken recipe you see that it’s heavy and loaded with cream of some sort. If you’re trying to eat better, it doesn’t mean that we have to sacrifice flavor. The same goes for anyone with any type of intolerance. This one pan creamy garlic chicken is absolutely satisfying, not loaded with cream, and doesn’t leave you feeling guilty!
And of course–it’s a one pan recipe! It’s quick, simple, and quite delicious. Watching each layer of flavor come together is incredibly satisfying. A delicious find, for sure!

Adding The Layers To The One Pot Meal
It’s interesting to see this recipe come together. It becomes more complete with each new ingredient that is added to the pot. The only time that an ingredient leaves the pot is when the chicken is cooked so it can later be added into the sauce to warm through. Once the coconut milk comes in, there’s already so many flavors simmering that that coconut milk embraces all of it. While the sauce thickens, you can bet you’re only minutes away from a delicious meal.
One note, however, on the sun-dried tomatoes in the olive oil. I went off the ingredient list, but next time I make this, I would most likely half the amount of the sun-dried tomatoes. The flavor was a little overwhelming. Added a bit too much acidity than I wanted. In some bites it took away from the garlic creaminess intended for the recipe. That would be my one major note on this one pot recipe.
With the sauce balanced to your liking, it will pair perfectly with pasta and rice. If you’re going to use rice, I’d personally make white rice. It’s so much fluffier and makes each spoonful (or forkful) that much more creamy!

This one pan creamy garlic chicken recipe is incredibly easy to make and makes enough to satisfy your entire household. If it’s just the two of you, like us, then you’ll certainly have some sauce leftover. That’s something that I absolutely respect about this recipe. The only reason I knocked this recipe off by .5 is due to the acidity of the sun-dried tomatoes. I’m not sure if it was the brand I was using, or maybe it’s just an adjustment that I need to make for my household. Regardless, I would highly recommend giving this recipe a try if you’re looking to add a new one pan meal to your weeknight rotation.
This yet another recipe from The Movement Menu that we have really enjoyed. This blogger is wonderful in creating recipes that are gluten-free friendly.
