Happy Wednesday, friends!
I hope you’ve been well! It’s beginning to look a lot like Spring here in Chicago, so we’ve been enjoying the lovely sunshine. This certainly calls for a transition in our cooking. Moving away from hearty meals to something more light and refreshing.
Recently, I’ve been using tahini in my recipes which has been so delightfully flavorful. Per my boyfriend’s request, I made some chipotle salmon that didn’t necessarily follow a recipe, so we just stuck with temperature and time from previously used recipes. While the salmon isn’t the star of this post, I will mention that times will vary for baking salmon, even if you’ve made it at the same temperature and time another time before.
The star of this post, however, is the side that was paired with the salmon. Super quick and easy, so I’ll definitely be making it again.

This recipe would be super tasty with just about any protein, which makes it a very versatile side dish.

For how quick this is to prepare and bake–this recipe definitely deserves a full 5/5. Even better? While the broccoli is roasting, you could be preparing the main protein or any other dish. There’s very little nudging of the broccoli, especially if it’s spread out on a nice even layer. This side dish is amazing for how stress-free it is to prepare it. Now with it warming up outside–it’s time to cut back on the hearty meals and enjoy more of the light cooking. I can’t wait to see what else I’ll pair this with!
