GreyEyes Cooks: Caprese Chicken

When It’s Snowy and I Just Want to be Cozy…

Each weekend I try to find a recipe I haven’t tried yet, so this week I wanted to check off a few boxes.

  • Flavorful
  • Easy to Make
  • Low Carb

For this version of Caprese Chicken, I followed the recipe from Delish. 🙂

I was in the city over the weekend, so I did my grocery shopping at Whole Foods. I didn’t have to make many adjustments to the recipe with the exception of fresh basil. Unfortunately, the location I was at was currently out of stock. Luckily, we had some dried basil at home. While it doesn’t have that same color or bold, fresh flavor–we made it work. If you are looking for having a bright presentation, I would always opt to have fresh garnishes/active ingredients.

Like with all recipes, prepping your ingredients DEFINITELY saves a buttload of time. So before you get cooking, cut the tomatoes in half and set them aside in a bowl before moving over to the chicken breast. I was only making dinner for me and my boyfriend, so I bought 2 chicken breasts and cut them in half. Rather than guessing if the thicker parts were cooked, I figured this would be better. It cooked faster and got us to our meal quicker, too 😛

After the chicken was cooked and set aside to rest, I tossed the tomatoes in quickly and let them simmer until they softened. Once mixed in with the balsamic sauce, it was time to bring the chicken back into the mix so the mozzarella can take its place as the crowning ingredient. And yes–I did fight back the urge to stack that mozzarella high!

So, my posts are not about HOW I made these meals, but rather how did these recipes measure up to the actual result. I am by no means an Iron Chef, but I can follow directions. If something ended up great, then we can say that the direction were accurate. If something went completely wrong? Well, we can begin to narrow it down to cook execution, or the recipe. Luckily, the recipe turned out just fine!

So….let’s get to it!

Overall, the recipe when followed to the point tastes and looks exactly how you’d expect it to. I’m not master plater, but at least it looked HELLA good in the pan! Did it taste good? Yes! The chicken was juicy and the tomatoes released most of their liquid, so there was balsamic sauce a plenty. Would have been tasty to dip in some french bread–but we kept the carbs down. If you really wanted to jazz it up, I’d recommend even using a balsamic glaze on top of the chicken with the finished product.

Without the fresh basil, I still give this recipe a passing grade. I’ll definitely make it again, just to see the full bright color when fresh basil is included. Plus, this was super quick and easy to make, which makes for a quick weekend meal, or even better, a yummy meal after a long day. The less time spent in the kitchen, means more time spent with your loved ones. That, my friends, is priceless.
