A Feast For Your Eyes AND Your Stomach
Hello once again, my friends! Are we ready for Fall? I’m not sure I am, but I am certainly ready for beautiful Fall colors…in food. This recipe for Spanish Chicken and Rice is absolutely exceptional and I cannot wait to dive into it with you all.
If you’re trying to cut down on carbs, then you must be no stranger to cauliflower rice. I’ve certainly made plenty of meals using it, but the way that it is prepared in this recipe is just delightful!

Don’t Like Cauliflower Rice? Don’t Give Up On This One
I admit that cauliflower rice may not be for everyone. I’m not a fan of cauliflower in general, but I do appreciate its texture when it’s riced. This recipe completely knocks it out of the park because it’s deliciously seasoned and enveloped in spice from the peppers. And yes–the color! Just seeing the plate with those beautiful turmeric yellows brings a smile to my face.
But yes–the flavor. Normally I see cauliflower rice used similar to just rice. Meaning it is not often seasoned and meant to accompany your “main ingredient/dish” like a plate filler or selected carb. In the recipe for Spanish Chicken and rice, the cauliflower rice goes above and beyond just being a plate filler. It’s one with the chicken and chicken is one with the rice. All the flavors come together into a truly delicious one-skillet dinner.
So if you’re on the fence because this does not use traditional rice, this is my nudge to give it a try. I promise that when cooked properly, this is flavorful and definitely doesn’t make you constantly think about eating cauliflower. You’re eating a medley of spices and textures in each forkful/spoonful.
On top of that–frozen cauliflower works wonderfully.
Spanish Chicken Spice Makes All The Difference
When I first came across this recipe, I first noticed the color, which enticed me to keep reading down the ingredient list. Rightfully so! This recipe includes a lovely medley of spices that can typically be found in most pantries. This combination is neither too spicy, not too mild, which I think makes it so enjoyable. If you don’t have all the spices you need, then I highly recommend getting them. They’re all pretty basic, so there shouldn’t be a reason to find substitutions. I can promise you that these can be found at your local grocery store without extra effort.

If you’re looking to add a new recipe to your weekly or even monthly rotation, then I wholeheartedly give this recipe my seal of approval. This recipe for Spanish Chicken and Rice is a no-brainer 5/5 from me. This was so easy to make, yet it looked like it could have been ordered at a restaurant and cost a pretty penny. If you’re looking to elevate the flavors during your weeknight dinner, then you should absolutely be adding this one to your list!
It’s colorful, juicy, and with a texture in the cauliflower rice that is just the right amount of crunch and softness. Eating healthier doesn’t mean bland and flavorless. There are so many beautiful combinations with spices and this one is absolutely at the top of my list.
