GreyEyes Cooks:Better-than-Takeout Stir-Fried Udon

Hello friends!

I hope you all had a splendid weekend! It’s still chilly here in Chicago, and frankly, it keeps getting colder! I’m ready for Spring.

Anywho…

Let’s talk cravings. I’m sure I’m not the only one who can’t rest until a craving is satisfied. Yeah, that’s where we were at this weekend. I was craving stir-fry, but wanted to cook rather than going out. Luckily, I found a great recipe for some simple and tasty stir-fry. And before I even get to talking about it–I can say with confidence that I’ll be making it again.

So where did we find this recipe? On Bon Appetit’s website! The recipe can be found-> here.

For starters, one of the most important ingredients in this dish would have to be the noodles. Now, keep in mind that you just won’t be able to achieve the same kind of thick noodle with store-bought dry udon. I ended up going to a local Asian grocery store to buy instant udon, which can be found in the refrigerated section. Holy smokes–that made ALL the difference. Seriously. I’m going to be picking up a few more packs just to have around for future stir-fry and even soup. Super tasty!

As long as you have your ingredients ready, it shouldn’t take more than 30 minutes to prepare and serve. Cooking the cabbage takes a little longer at first because you cook it until the edges begin to brown. Once they do, everything else follows every quickly! Cooking the ground pork doesn’t take much longer since the pan I used previously had the cabbage cooking in it, therefor, it was already hot. Nice!

Usually I tend to find some changes that could be made in a recipe. Interesting about this one–there’s a few ways you could change it, but without making any you’ll still have a great meal to enjoy. So, if you want to experiment or need a reliable recipe for those busy weekdays, I think this one is a winner.

As for servings? The recipe says that it yields 4 servings, but I’ll be honest with you that between me and my boyfriend…yeah, well, it yielded 2 servings. Typically when recipes state that they yield 4 servings, I look at the type of ingredients that are included. So, if you plan on making this recipe for a family of more than 2, I’d consider adding a bit more of well…everything!

It’s pretty clear that I liked this recipe, so let’s break it down.

If you’ve read my previous reviews, then you know I’m really after three things. We want the recipe to be easy, quick, and tasty! Plus, if it doesn’t require too many crazy ingredients that break the bank? Yeah, even better.

This recipe really covers the bases and it’s definitely one that I will make again. Whether I make some changes to it or not, it’s definitely added to my growing list of reliable recipes. And from the comments my boyfriend made–I don’t think he’d complain either if I made it again!

So now I hope I leave you wanting some stir-fry, or at least wanting to try something new when you ponder what to eat this week.

  1. This sounds great! I love stir fries but I haven’t used udon noodles before so will check them out. I think I might add more veggies as well because I get a bit obsessive about how colourful my stir fries are 😂

    • I highly recommend them! And heck yeah! The beauty of stir-fries is that you can add all the veggies you want and have an AMAZING meal!
